This article published by celiac.org aims to educate the average person on what gluten is, and which types of food it is most commonly found in. The article explains that gluten is a type of protein found commonly in grains such as wheat, rye, and barley. Gluten acts like a glue for plants and allows them to hold their shapes. As stated in the article, gluten is the general name for the proteins found in wheat, rye, etc. What gluten does is help foods maintain their shape, making it seem like glue. For this article they go over many topics surrounding gluten, but I probably will only be referencing a few. The most common topic was Intolerance vs. Sensitivity. Celiac disease is one of the most severe cases of Gluten intolerance, it is an autoimmune disorder in which whomever has it their body treats gluten like its harming their body. Symptoms of this particular disease is: digestive discomfort, skin rashes, etc. It is described as by doctors difficult to diagnose. As for gluten sensitivity, This one doesn’t really talk much about gluten sensitivity as much as they do gluten intolerance.
Some specialist don’t even consider this to be an authentic condition, they believe a substance often found with gluten could be cause.
